Joseph®: The Alliance of Nanocut® Technology and Exceptional Materials

Joseph® : L'Alliance de la Technologie Nanocut® et de Matériaux d'Exception

Choosing a knife is both a simple and complex act. Simple, because above all, it must cut efficiently. Complex, because it tells a story: the story of its materials, its construction, and its design. This is precisely what we want to convey with the Joseph® knife. Born from a dual need—that of restaurateurs facing extreme constraints and that of passionate individuals—Joseph® is a bridge between the TB-1648 family heritage and modern technical innovation. It doesn't just sit on the table; it enhances it while offering an exceptional cutting experience.

Key takeaways:

  • A strong identity: After Hector, Auguste and Georges, Joseph perpetuates the tradition of giving TB knives first names from family history.
  • Designed to last: Originally conceived for the restaurant industry, it withstands thermal shocks and industrial washing cycles thanks to its full silk construction and robust materials.
  • Nanocut® Performance: A cutting technology offering exceptional sharpness (rated over 100 mm in the CATRA test) and disconcerting ease of sharpening.
  • Ingenious design: A unique ability to stand on its edge to protect the tablecloth, combined with noble materials such as acetate or Hydrawood® wood.

Why was the name Joseph chosen?

At TB-1648, we like to imbue our creations with soul. The choice of first names for our French-made table knives is no accident; it's a nod to the brand's history and the generations who have shaped it. Joseph is part of this family lineage, joining Auguste, Hector, and Georges. It's not just a label; it's a way of telling our story and giving meaning to the object you hold in your hand.

Why does this knife stand upright on its edge?

It's a design detail, penned by our designer, that makes all the difference in use. The Joseph® knife has been balanced so that it can be placed on its edge without the blade touching the table. This feature offers three major advantages: impeccable hygiene (the blade doesn't touch the surface), protection of your tablecloth (no more grease or sauce stains), and undeniable visual elegance that allows you to appreciate the knife's lines and the quality of its polish.

What is the connection with the outdoor world?

Although designed for the table, Joseph® borrows DNA from our TB-Outdoor division. Its blade features a counter-bevel on the upper part, adding character and a touch of visual "technicality" without being aggressive. Furthermore, a small half-moon has been integrated into the base of the edge. Beyond aesthetics, this technical feature allows for a clean and precise end to the sharpening, avoiding unsightly bulges at the handle joint. It's the perfect blend of table elegance and the technical rigor of a field knife.

Acetate or Hydrawood: which to choose?

The Joseph® offers two types of handles with remarkable properties. Acetate , composed of 70% wood fibers, is a warm material often used in eyewear. It plays with light, offers depth, and has an amazing ability to develop a patina with use. The alternative is Hydrawood® , a wood whose pores are saturated with a resin made from sugarcane molasses. This treatment makes it extremely resistant to water and heat, allowing it to withstand the dishwasher where conventional wood would be damaged.

Frequently Asked Questions (FAQ)

Can I put my Joseph® knives in the dishwasher?
Yes. Originally designed for restaurant professionals, the Joseph® knife is built to withstand harsh environments. Its Nitrox® steel blade (16% chromium) is highly corrosion-resistant. The handles, whether made of acetate or Hydrawood®, are also dishwasher-safe, although hand washing is still preferable to maintain its pristine shine over the long term. However, it's best to place the knife in a drawer (not a basket) in the dishwasher to protect it from impacts that could damage the edge.

How to maintain the shine of the acetate handle?
Acetate is a material that improves with age. If you wish to restore its original shine, there's a simple trick: lightly rub the handle with a cloth dampened with a little acetone, then rinse it immediately under water and dry it. This instantly revives the material's luster.

Is sharpening complicated with Nanocut® technology?
On the contrary. Although the cutting performance is exceptional, maintenance is simple. Just run the back of the blade (the side opposite the logo) over a sharpening steel at a very slight angle. A few passes back and forth are enough to straighten the edge and restore a razor-sharp edge.
