Episode 7 of Top Chef season 16 lived up to all expectations with a spectacular build-up of tension. The eight remaining contestants first ventured into the darkness of the famous Black Box, before tackling a daring culinary challenge: reinventing street food under the watchful eyes of Michelin-starred chefs.

 

Challenge 1: The Black Box

The curtain rose on one of the most anticipated moments of the season: the legendary Black Box. But this time, the challenge took an unprecedented turn. To stump the contestants, the five brigade leaders – Hélène Darroze, Stéphanie Le Quellec, Philippe Etchebest, Paul Pairet, and Glenn Viel – combined their creativity to create, with ten hands, an enigmatic dish totaling thirteen stars.

The candidates are divided into pairs.

After the tasting, only two pairs are allowed to cook; the other two go directly to the elimination round.

Esteban and Margaux, as well as Sean and Quentin, qualify for the next stage of the competition.

In complete darkness, deprived of any light, the contestants embarked blindly on a sensory quest where only their palates and instincts could guide them. Confusion quickly ensued. Esteban and Margaux mistook cuttlefish for a mushroom, while Quentin and Sean took rice starch for angel hair pasta. The traps set by the chefs worked perfectly.

And yet, amidst this culinary fog, one of the chefs revealed a talent. Margaux, focused and methodical, managed to see through the deceptions and accurately identify several elements, including the delicate marine notes of the seaweed and sea lettuce. A performance that was met with admiration backstage.

At the end of this demanding and eventful challenge, the Margaux-Esteban duo emerged victorious, securing their place in the following week and earning a spot before the inspectors. This impressive feat did not go unnoticed by François-Régis Gaudry, who didn't hesitate to call Margaux's achievement the "heist of the century" in the kitchen.

Challenge 2: Street food, gourmet style

For the second part of the show, the candidates were immersed in the vibrant world of street food, guided by two exceptional figures: the double-starred chef Olivier Nasti and Moïse Sfez, a true Marseille reference in the art of sublimating street food.

The challenge? To reinvent popular classics—hot dogs, pastrami, hamburgers—by infusing them with a gastronomic dimension. A challenge that showcased creativity, while illustrating the growing influence of street food on the codes of haute cuisine.

Tensions were running high, especially for the teams of Hélène Darroze and Glenn Viel, each represented by a single candidate. For them, the slightest mistake could spell the end of the adventure.

·         Charlie is tackling the Breton galette complète.

·         Philippine reinvents pissaladière as a soufflé.

·         Charles deconstructs the pan bagnat.

·         Quentin chooses the most well-known sandwich: the ham and butter sandwich.

·         Sean opts for the cheese puff pastry.

·         Claudio makes the chicken and vegetable sandwich a gourmet experience.

Charles stood out with his pan bagnat, followed by Charlie with his galette complète, and Quentin with his jambon-beurre. They are the ones who will go before the inspectors.

Elimination round

Philippine and Sean find themselves in the hot seat. Ultimately, it's Sean who leaves the competition after this challenge. He failed to impress the judges with his cheese pastry.
