The fourth episode of the sixteenth season of Top Chef , broadcast on Wednesday, April 16, 2025 on M6, offered an intense competition, marked by demanding challenges and unexpected twists.
First challenge: Surprise the chef
The contestants were asked to create a spectacular dish, showcasing aesthetics and culinary presentation. The goal was to impress and surprise multi-Michelin-starred chef Heston Blumenthal , renowned for his avant-garde cuisine.
- Quentin presented a vegetarian pot-au-feu, where the vegetables mimicked the textures and flavors of meat. His final creation: a deconstructed pot-au-feu where all the elements were presented separately.
- Steven suggested a dish that the chef had to turn off before it could be tasted.
- Sean designed a beef and fennel consommé, accompanied by a trompe-l'œil spoon made from bone marrow, a direct reference to the British chef's culinary world.
- Esteban created a dish called "Disappointment, satisfaction", featuring a savory panna cotta, followed by a sweet version.
- Claudio presented a dish on the theme "The Cycle of Life in 3 Minutes Flat." The contestant offered fruit milk to evoke childhood, a crispy dish representing adults enjoying life to the fullest, and a purée representing old age. On the table, an inverted hourglass symbolized the passage of time, and the chef had to savor everything in 3 minutes. His approach was praised for its originality and presentation, allowing him to qualify directly for the Michelin Guide inspectors' challenge.
Elimination round: Elevating chocolate
Next, the candidates had to work with chocolate in order to impress the only starred pastry chef: Sébastien Vauxion .
After the tastings, the chef selected three candidates: Quentin and his daring "chocolate-eggplant," Sean with an elegant "chocolate square," and Esteban with his "hot, hot, chocolate." Steven 's dish, titled "to strike out," thus found itself in a duel against Noémie 's.
- Noémie , a self-taught chef and lone candidate, presented a daring dish playing on the contrasts between acidity, sweetness and bitterness.
- Steven , seeking redemption after his poor performance, offered a dish combining white chocolate, rice pudding and vegetables, an unexpected combination.
Following the blind tasting, François Régis Gaudry was won over by Steven's proposal, giving him a second chance in the competition. Noémie , however, was eliminated.
